This paleo turkey meatloaf is one of my son’s favorite “comfort foods.” Its best to use ground turkey thighs, or find ground turkey meat with a higher fat percentage if you can find it. I try to cook a variety of meats throughout the week, so as not to overload my family with red meat, but turkey is a lean meat and there’s not much that can be done about that. That’s why I add avocado, to not only moisten the loaf, but to also add some extra healthy fat to the meal.

Ingredients
  • 2 large eggs
  • 1 1/2 pounds ground turkey (dark meat, higher fat preferable)
  • 1 cup zucchini shredded
  • 1 cup almond flour
  • 2 Tablespoons tomato paste
  • 1 1/2 Tablespoons olive oil
  • 1 Tablespoon Worcestershire sauce (make sure its gluten-free!)
  • 1/3 cup fresh parsley chopped

Instructions
  1. Preheat oven to 400 Fahrenheit. Grease a 9x5 inch loaf pan. Spoon out avocados into a large bowl and with the back of a spoon or a pestle, mash until creamy and there are no chunks. Place the remaining ingredients in a large bowl and mix together, thoroughly. Bake for 50 to 60 minutes or until it begins to brown on top and is cook through. Remove from the oven and let "rest" for 5 to 10 minutes before serving.
